Chicken Wild Rice Soup



Chicken and Wild Rice Soup
1 T olive oil
2 T garlic
1 onion, chopped
4 stalks celery, chopped
6 carrots, chopped
9 sweet mini peppers, or 1 bell pepper
6 cups chicken broth
3 cups water
2 chicken breasts, cooked and shredded
2 cups cooked wild rice
2 tsp basil
2 tsp oregano
1/2 tsp thyme
1 T parsley
1/2 tsp pepper
1 T chicken bouillon
1 small can cream of chicken soup

Saute the onion, celery, carrots, peppers, and garlic in the olive oil for 5-7 minutes. Then add the rest of the ingredients and bring to a boil and simmer for a few hours. Serve with warm bread or rolls.
